Rogan josh is a popular Kashmiri dish that is thought to have originated in Persia and was brought to India by the Mughal dynasty. 'Rogan' means clarified butter in Persian, and 'Josh' means hot or passionate. It gets its signature red colour from the use of mild red Kashmiri chillies, and it's flavoured with fennel and dry ginger powder. Rogan josh sauce is recommended for lamb and other red meats.

HOW TO USE

GET YOUR PAN HOT: Saute your meat (we recommend lamb) or vegetables in a pan at medium to high heat until three-quarters way cooked

LET IT SIMMER: Pour the sauce into the pan, add 2 tbsp water and bring to a boil. Reduce and let it simmer with the lid on for 10 minutes until the oil from the sauce splits.

FINISH IN STYLE: For added freshness, garnish with coriander. **Chefs kiss**
