This box has everything you need for the ultimate at-home BBQ, featuring some of our signature and most-loved tandoori dishes from the restaurant - perfect for enjoying with your friends and family around the dining table. 

The tandoor is at the very heart of our cuisine at Brigadiers – it is the largest section on the menu and we take enormous pride in the variety and range of tandoor dishes available, so we're very excited to be sharing some of our favourites with you. 

Get that barbecue fired up for some char and the real Brigadiers-at-home experience, or you can still cook these dishes in a conventional oven/grill if you'd prefer.

TANDOORI MASALA LAMB CHOPS

Lamb chops - or more traditionally goat chops in India - are a staple for any tandoori restaurant and one of our most popular items across JKS Restaurants. Hot with mounds of kashmiri chilli, bright, zesty ginger and the smokey tandoori char, there are seldom few occasions when these chops don’t hit the spot.

This recipe was inspired largely by trips to Delhi and the north west of India, with a small nod to the lamb ‘barrah’ kebabs we used to eat at Gaylord’s on Mortimer Street.

At home, we would recommend either getting your grill as hot as possible or firing up some good quality charcoal on the barbecue.

    Our Makai palak is based on the traditional Punjabi farmers' dish - Saag and Makki Ki Roti (stewed greens with corn flatbreads). Taking a fresher and lighter approach, we roast garlic and cumin in oil before adding blanched spinach and cooking out to lock in the flavour and colour, before adding sweetcorn through the mix.

    Best enjoyed alongside a rich curry like our signature Chicken Butter Masala or a Dal with Garlic Naan.

        Inspired by the street side sigri cooking of the famous Delhi 6 district around Jama masjid, where hordes of people queue for the likes of mutton seekh kebabs, brain curry, saffron-imbued sheermal and grilled chicken coated in chaat masala and more Amul scorching-hot salted butter than you could envisage, these Chicken Wings are a Brigadiers classic.

        Unlike the more widespread creamy, tomato-based curry, this is a more true literal take on the key players in this dish - ‘butter’ and ‘chicken’. Best enjoyed with Garlic Naans, Tandoori Lamb Chops and ice-cold Tropical Cyclone beers.

        A signature dish, originating at Trishna and following us to Brigadiers via Gymkhana, this dish showcases the best of prime wild tiger prawns and sweet and pungent roasted garlic. We recommend enjoying this dish as an add on to the 'Gymkhana Club Experience', or build your own meal around these prawns with dishes like Saffron Pilau and Wagyu Keema Pao.

         Chaat is a universally loved style of what is essentially India’s fast food. You see it everywhere on the street but not normally in high-end restaurants in London. A good chaat should cover all the flavours of India - Salty, Sour, Spicy and Sweet.

        This chaat was many years in the making but we finally found a dish which can do service that marries the traditional elements of a chaat with our signature punchy flavours.

                        WILD MUNTJAC BIRYANI

                        Taking anywhere from 24 hours to three days to cook, biryanis are really the ultimate celebratory dishes of India. Biriyanis are hugely regional in India – everyone has their own take – and our style is definitely heavily inspired by the royal Awadhi courts of Lucknow.

                        ​Expect perfectly separated flakes of rice, a deep, braised Muntjac shank and the heady perfume of orris water (kewra) and saffron. ​It has become a Gymkhana signature to serve our biryanis under a pastry lid, bejewelled with a blend of spices and seeds, allowing the complex flavours to meld together in the residual steam.

                        We serve our biryanis as the centrepiece of our feasting menus, and so recommend starting with classic starters like the Gymkhana Samosa Chaat and the Brigadiers Chicken Wings.

                          WAGYU KEEMA PAO

                          Keema - a term relating to any form of minced meat - is a versatile dish that can be eaten as a starter, main or snack. In India, it's often sold as a street dish, and cooked on a tawa (a large iron griddle).

                          Here we have used wagyu beef, our take on the traditional recipe. 

                          We recommend sharing this as a starter between four people, followed by the Wild Muntjac Biryani.

                              Lamb chops - or more traditionally goat chops in India - are a staple for any tandoori restaurant and one of our most popular items across JKS Restaurants. Hot with mounds of kashmiri chilli, bright, zesty ginger and the smokey tandoori char, there are seldom few occasions when these chops don’t hit the spot.

                              This recipe was inspired largely by trips to Delhi and the north west of India, with a small nod to the lamb ‘barrah’ kebabs we used to eat at Gaylord’s on Mortimer Street.

                              At home, we would recommend either getting your grill as hot as possible or firing up some good quality charcoal on the barbecue.

                                          Taking anywhere from 24 hours to three days to cook, biryanis are really the ultimate celebratory dishes of India. Biriyanis are hugely regional in India – everyone has their own take – and our style is definitely heavily inspired by the royal Awadhi courts of Lucknow.

                                          ​Expect perfectly separated flakes of rice, a deep, braised Muntjac shank and the heady perfume of orris water (kewra) and saffron. ​It has become a Gymkhana signature to serve our biryanis under a pastry lid, bejewelled with a blend of spices and seeds, allowing the complex flavours to meld together in the residual steam.
